Sunshine in a Glass: Suco de Maracuja

One of my favorite things about South America has got to be the juice. Fresh juices of melancia (watermelon), laranja (orange), guayaba, abacaxi (pineapple), and manga (mango) are in every home and restaurant. They are refreshing and invigorating, none more so the suco de maracuja, passion fruit juice. I just learned to make it this morning, and I thought I’d include a recipe.

 

 

Recipe: Suco de Maracuja (Passion fruit Juice)

 Ingredients:

5 passion fruit

1 liter of water

2 C sugar

Ice to suit

 Instructions:

  1. Halve passion fruit fruit and scrape insides into a blender. Discard peels.
  2. Add liter of water and turn on blender. Process until smooth, approximately one minute.
  3. Strain the juice using a fine mesh strainer. Discard the seeds collected.
  4. Add sugar, stir thoroughly, and add ice. Serve.

 

Note: In order to make this a cocktail, simply add vodka. I first had Coctel de Maracuja at the beach in Ecuador, and it is a really great drink for summer anywhere.
